Roasted cauliflower is fantastic, plain and simple; needing so little attention from us, and coming out of the oven with a can't-resist texture, it's no wonder it gets so much love. But the next time you're grabbing a head from the grocer, check out these recipes too. They use just one head to make five distinct, easy, vegetarian meals they're perfect for lunch for one, but of course you can scale any up to serve at dinner, take to a party or to just eat extra of, we wouldn't blame you.

As for roasting a cauliflower, it's as simple as this. Trim the stems and leaves flush with the bottom of a whole head, and discard. Brush a 3-pound head with a tablespoon of olive oil, season it with salt and pepper, and roast it in a 450F degree oven on the bottom rack for 50 minutes.
