Bulgogi lessons for chefs feeding FIFA Women's World Cup athletes

Soccer teams from around the world are arriving in Ottawa this week to take part in the FIFA Women's World Cup, and some local chefs have been taking special cooking lessons to prepare for the arrival of the athletes.

Soccer teams from around the world are arriving in Ottawa this week to take part in the FIFA Women's World Cup, and some local chefs have been taking special cooking lessons to prepare for the arrival of the athletes.

The Korean Embassy asked Sunna Na, chef at The Swan at Carp, to teachchefs at the Delta Hotel how to make traditional Korean cuisine to feed the Korean FIFA women's teamstaying at the hotel.

One of the dishes Na showed the Delta chefs is bulgogi, a popular traditional Korean dish.Na will share her cooking lesson on CBC Radio's All In A Day on Wednesday and you can find her recipe below.

Bulgogi

Ingredients

  • 1 lb. beef (thinly sliced and cut into about 2 inch by 4 inch rectangles).Almost any cut of beef can be used; just make sure it's sliced thinly.
  • Half an onion, thinly sliced.
  • A bunch of green onions cut into 2-inch lengths.
  • Mushrooms,thinly sliced.

Marinating sauce
  • 2 tbsp. grated fresh pear.
  • 5 tbsp. soy sauce.
  • 2 tbsp. sugar (or honey or other sugar substitutes).
  • 1 tbsp garlic. (chopped or grated).
  • tsp. black pepper.
  • 1 tbsp. cooking wine (rice wine or white wine).
  • 1 tbsp. sesame oil.
  • 1 tbsp. beef broth.

Directions

  1. Drain the blood from the beef by pressing the meat with paper towel to get rid of as much blood from the surface of meat.
  2. In a bowl, mix every ingredient except the sesame oil and the beef stock to make the marinating sauce.
  3. Mix the meat with the marinating sauce and wrap the marinated meat with plastic wrap. Put it in the fridge for at least 30 minutes. You can leave it overnight.
  4. Heat a pan to medium heat.Mix the beef stock with the marinated meat and the vegetables, and put it in the pan. Then add the sesame oil.
  5. Slowly pan fry until all the meat is cooked (about 8-10 minutes).
