People will be porking out on unique bacon creations at the Great Saskatchewan Bacon Festival Saturday in Kipling.

It's the 3rd annual bacon festival but it's the first time that chefs and home cooks get to compete for a golden ticket to the CanadianFood Championships in Edmonton in the bacon category.

Kipling Mayor Duane Leicht and his son Andy are competing against each other for bacon supremacy.

Duane has a plan to make bacon sushi.

"It was an idea from a son of a friend of ours and I rolled with it," he joked to CBC Saskatchewan's Blue Sky."Hopefully we'llcome up with something tasty."

Instead of seaweed, he's going to use prosciuttoand the sushi rice will be a bacon risotto.

"When they taste it they are going to be totally blown away. It's going to be something they've never tasted before. It's going to expand their mind with its bacon goodness."

Meanwhile, his son Andy has chosen a twist on a Saskatchewan classic sweet potato and bacon perogies.

"This is a new reinvention with more bold flavours and a pronounced bacon taste to it," Andy said.

Both father and son say they work together a little bit, but once the competition starts, the gloves come off.

"There's constant rivalry," said Andy.

"Once the competition starts tomorrow there may be some trash talk," said his dad.
