Pie dough can go wrong in so many ways . It's one of the reasons that frozen crust is always available at the grocery store -- many home cooks just don't want to deal with the hassle. The thing is, homemade pie crust made right can be a transcendental eating experience. It's time you stop missing out.
America's Test Kitchen has come up with an easy, fool-proof way to make homemade pie dough and it's all thanks to booze. Booze, more specifically vodka, gives your dough the amount of moisture it needs to roll out easily without allowing too much gluten formation. (Gluten makes pie crust tough.) This is thanks to the ethanol in the alcohol, which slows the formation of gluten.
