What's a barbecue without deviled eggs? These little bites are a summer tradition, and there are countless recipes out there that put some rather unusual twists on the classic staple. While adding aggressive flavors like crumbled blue cheese or pesto to the yolk mixture can be a fun way to experiment, sometimes a more understated update is the smarter way to please a crowd.
Here's a recipe that adds a burst of color and fresh flavor, elevating the basic deviled egg without going overboard.
Deviled Eggs With Microgreens and Bacon
Adapted from "Sweetie Pie's Cookbook"
Ingredients
6 hard-boiled eggs
3 Tbsp. mayonnaise
1 Tbsp. prepared mustard
1/2 tsp. sugar
Salt and pepper
1⁄4 cup finely crumbled crispy bacon
Paprika for garnish
Microgreens for garnish
Directions
Slice the eggs lengthwise and gently scoop the yolks out into a medium bowl.
Mash the yolks well with a fork. Add the mayo, mustard and sugar and mix well. Season with salt and pepper. Stir in the bacon.
Using a teaspoon, spoon the yolk mixture back into the egg white halves. Arrange on a platter and sprinkle with paprika and a sprig of microgreens.
